Chef Besh went to the CIA. So did I . While I was in Wines & Menus class, one of my classmates named Byron piped up when we were tasting a really nice, really expensive Italian wine. Now, Byron was from the WOODS of New Hampshire, and had a -shall we say- special demeanor. Like an Appalachian mountain kid, except in that particular New England way. Anyhow, Byron piped up to say that this particular wine would go real well with squirrel. It was awesome. And to give the instructor credit, he agreed quite suavely.
